Pepper Szechuan Ground


Ground Sichuan pepper has a slightly lemony and warming flavour(with a tingly/numbing sensation), although not as hot or pungent as the others in the pepper family. It is a background spice that sets the stage for other hot spices. It is commonly found in Chinese cuisine, but is also used in many Nepalese, Tibetan, and Bhutanese dishes as well.  It is often combined with the flavours of ginger and star anise, but is also combined with salt and dry roasted to make a seasoning/condiment for many meat dishes.
